Make it Carrot Cake

Want to make a carrot cake with a lot less effort?
Our Spiced Spelt Ginger cake kit makes a great base for the cake and cream cheese frosting!

Carrot Cake:

Before you get started, measure out the following:

  • 1 1/2 cups grated carrots
  • 1/3 cup sultana raisins
  • 1/3 cup toasted walnut pieces

Once, you've made the cake batter according to the instructions, stir in the carrots, sultanas and walnuts. 

Pour into the prepared pan (or divide into two 6" round cake pans). Bake until tester comes out clean. Carrot cakes will take longer than the recipe card says. Our 6" ones took a little over 40 minutes.

Cream Cheese Frosting (not too sweet)

 Follow the instructions for the frosting, and add 1/2 cup softened cream cheese to the softened butter. Whip up until fluffy. this make more frosting than usual!

Assemble and decorate, then chill until firm, at least 2 hours.
